Probably our favourite sheeps cheese! Berswell Ewe comes from Ram Hall in the West Midlands. It has a classic nutty, sheeps milk flavour with complex fruity overtones, similar to Ossau Iraty but with greater depth of flavour. Matured for 4-8 months. Made with un-pasteurised milk and vegetarian rennet.
