Double Gloucester
Double Gloucester uses full cream milk from both the evening and morning milkings, (the reason why it is called Double). It is a sturdy cheese. In times gone by cheese buyers would actually jump on any doubtful specimens to test their strength. This Double Gloucester is made by Diana Smart in Birdwood, Gloucestershire using unpasteurised milk from a herd of 66 named cows. As well as making cheese, Diana keeps Gloucester Old Spot pigs and feeds them the whey left over from the cheese making which produces delicious bacon!
Made with unpasteurised milk and vegetarian rennet.
