Single Gloucester

Single Gloucester was traditionally made as the 'house' cheese when Double Gloucester was produced. Single Gloucester uses the skimmed milk from the evening milking mixed with the full cream milk from the morning.

Made by Diana Smart, this cheese is milder and milkier than its Double cousin but still has the grassy flavours and mellow after taste.

Made with un-pasteurised milk and vegetarian rennet.
