Single Gloucester

Single Gloucester was traditionally made as the 'house' cheese when Double Gloucester was produced.  Single Gloucester uses the skimmed milk from the evening milking mixed with the full cream milk from the morning. From Charles Martel in the Cotswolds, the cheese has a mellow buttery flavour with herby, grassy overtones.  Made with unpasteurised milk and traditional rennet.
